Wet Ingredients

  • 2 eggs
  • 1/3 cup orange zest
  • 1 cup coconut milk
  • 1/2 cup orange juice
  • 1/2 tsp. orange extract

For the Orange Glaze

  • 1 cup powdered sugar
  • 2 Tbsp. orange juice

Instructions for Gluten-Free Orange Muffins

  1. In a large bowl, whisk together all wet ingredients until smoothly blended. Gently fold in the orange zest.
